These little treats are effortless to make and look cute on the table (and they taste even better).
This makes about 18 cookies
What you’ll need2 1/2 cups all-purpose flour1 1/2 cups granulated sugar1/2 teaspoon baking powder1/4 teaspoon salt1 cup (2 sticks) butter – softened at room temperature2 teaspoons pure vanilla extract2 large eggs1/4 cup Wilton white granulated sugar
To decorate you will need Egg shaped cookie cutters Wilton orange and blue icing Wilton orange and blue melted chocolate
DIRECTIONS1. Preheat oven to 350°F / 180°C and line a baking sheet with parchment paper.2. Place flour, sugar, baking powder, and salt in a mixing bowl and mix with an electric mixer until evenly distributed.3. In another mixing bowl, add butter and sugar. Using a mixer on medium speed, beat until light and fluffy (about 3 minutes). Add eggs and mix until combined. Add vanilla extract.4. On low speed, add 1/4 of the dry ingredients and mix. Continue adding flour, 1/4 cup at a time, until all is combined and incorporated.5. Sprinkle a little flour on a hard surface or cutting board and your hands. Place a small amount of dough on the hard surface and press down with your hands (or use a rolling pin) to form a ball about 1/4 inch thick.6. Using an egg-shaped cookie cutter, cut out egg shapes from the dough and place on a baking sheet lined with parchment paper.7. Sprinkle each cookie with sparkling white sugar crystals.8. Bake for exactly 10 minutes (if baked longer, the cookies will brown).9. Let the cookies cool in the pan for a minute and while still warm, press a large Wilton chocolate chip into each cookie at the smaller end of the egg shape.10. Transfer the cookies to a wire rack to cool completely.11. Once cooled, pipe 3 dots of frosting at the larger end of each cookie to serve as the base.
