XOXO Valentines Day Cupcakes

These easy Valentine’s Day XOXO cupcakes are the perfect treat to make with kids, simple enough for kids to decorate from start to finish and delicious enough for the whole family to enjoy.

XOXO Valentine’s Day Muffins

This recipe will make 2 dozen regular sized cupcakes.

For cupcakes

1 cup unsalted butter2 cups granulated sugar4 large eggs4 cups all-purpose flour2 cups whole milk3/4 cup Hershey’s dark cocoa powder1 tablespoon baking powder1/2 teaspoon salt

1. Preheat oven to 350 degrees. Grease and line a cupcake liner with parchment paper. 2. In a large mixing bowl, beat together the sugar, butter, and eggs until light and fluffy. 3. Add baking powder, salt, cocoa, and cream until smooth. 4. Add 1/3 of the flour and stir until well combined. Add 1/2 of the milk and mix well, gradually adding 1/3 of the flour and another 1/2 of the milk, mixing well. Add remaining flour and mix well. 5. Pour batter into greased, parchment paper lined baking sheet. 8. Bake at 350 degrees for 20-25 minutes or until toothpick inserted comes out clean. 9. Remove from oven and let cool for about 10 minutes. 10. Transfer cupcakes to wire rack for at least 30 minutes to cool completely.

For the frosting1 cup (2 sticks) unsalted butter3 cups powdered sugar, sifted1/4 teaspoon salt1 tablespoon vanilla extract2 tablespoons cold milkDecoration – 1/2 cup Red Hots1. Beat butter in mixing bowl.2. Add half of sugar. Mix well on medium speed with mixer.3. Add remaining sugar and mix on medium speed until light and fluffy.4. Using decorating tip and disposable bag or Ziploc bag, pipe frosting onto each cupcake.6. Decorate with Red Hots in X’s, O’s and hearts.
